Ingredients: 40ml Master Infusion | 30ml Clover Honey | 170ml Coconut Water | 20 Mint leaves | 1 tsp Lime Zest | 5g CLG | 0.4g Xanthan | 1 pinch Baking Soda.
Protocol:
Flavor Bloom: Heat coconut water to 45°C. Muddle mint/zest 3m. Steep 10m; strain.

4. Final Assembly: Muddle Apple/Mint/Limes. Add 1 or 2 oz of base (10mg/1oz). Top with 4oz coconut water and 4oz sprite over ice.
IV. 52°C FROZEN REVERSE SPHERIFICATION
Bath: 7.5g Sodium Alginate / 1500ml Distilled Water (Rested 24h).
Freeze: Fill 6ml molds. Deep freeze at -23°C.
Reaction: Drop pucks into 52°C Alginate Bath for an instant melt and high-gloss skin.
Storage: Store in Coconut Water infused with Fresh Lime Zest.
Service: Serve on a Catering Spoon with a Lime Wedge and Smoked Sea Salt.
